Zucchini Shrimp Scampi

I love when my friends share a good recipe with me to try. Everyone knows I love to cook and eat healthy, so when it comes to cooking vegetables with a twist; I’m all open to trying a new recipe. I’m sharing this healthy recipe with you guys, because one of my good friends shared it with me. I couldn’t wait to buy a Veggetti machine to make this recipe. You can find one at your local Walmart for around $25. It’s a good investment if you like switching up the way you cook your vegetables! 1 lb of zucchini or (5-6)

1 lb shrimp 

Chicken stock

6 small cherry red tomatoes (cut in halves)

Garlic Clove

1 lemon

Black pepper 

Garlic Salt

Cayenne Pepper

Parmesan Cheese

1. Thin slice the 1 lb of zucchini with the Veggetti machine and set aside. 

2.Heat a medium skillet. Spray the skillet with cooking spray and add the shrimp.
3. Season the shrimp with the seasoning listed above and add 1 garlic clove, red cherry tomatoes, and lemon juice. Cook the shrimp in a medium skillet on medium until pink.
4. Add the chicken stock and 1lb of then sliced zucchini. Let it simmer for about 10 minutes. 


5. You can add Parmesan cheese for a garnish as optional.
6. Enjoy!!!
